Offal on the festive table? Why not. Pork ears in the marinade will justify confidence and will surprise guests with a spicy taste. The dish is prepared in advance, freeing up time on the day of the reception.

- 2 pork ears;
- 1 carrot;
- 1 onion;
- 3 cloves of garlic;
- Bay leaf;
- black peppercorns;
- 2 eggs;
- 1 tablespoon 9% vinegar
- 2 tablespoons of vegetable oil;
- salt;
- greens.
Instructions
Step 1
Rinse pork ears well under running cold water. Scrape them off with a knife if necessary. Rinse again.
Step 2
Place the washed ears in a saucepan. Pour about 3 liters of cold water into it. Cover the saucepan with a lid and place over high heat.
Step 3
As soon as the water boils, remove the lid, reduce the heat. Place the peeled carrots, garlic and onions in a saucepan. Add bay leaves and black peppercorns. Simmer the ears for 2, 5-3 hours. The water in the pot should boil very quietly.
Step 4
Turn off the heat after cooking. Leave the pork ears in the broth until it cools completely (this will make them more flavorful).
Step 5
Remove the cooled pork ears from the broth, dry. Cut the ears into small strips.
Step 6
Boil 2 eggs until tender.
Step 7
Prepare the marinade. To do this, mix 1 tablespoon of 9% vinegar, 2 tablespoons of vegetable oil, finely chopped boiled eggs. Season with salt and pepper to taste. Add chopped herbs (dill, green onions, parsley) to it.
Step 8
Put the pork ears in the marinade, mix everything thoroughly. Leave the ears to marinate for 2-3 hours.
Step 9
Serve marinated pork ears with boiled potatoes. Bon Appetit!
