Pig ears are very popular with beer drinkers. They are used smoked, salted, fried, pickled and even pressed, dipped in a flavored sauce or just like that. However, this offal is suitable not only as an appetizer for a hop drink, but also as an ingredient for a delicious and completely self-sufficient dish. Try at least one recipe for pork ears salad, and you will understand that this is a real delicacy.
Pork Ears Snack Salad
Ingredients:
- 2 pork ears;
- 1 cucumber;
- 1 carrot;
- 2 cloves of garlic;
- 30 ml of 6% vinegar;
- 40 ml each of olive oil and soy sauce;
- 2 bay leaves;
- 5-6 peas of black pepper;
- salt.
Rinse pork ears well and dry. Singe them over a gas burner, lighter flame or a match, if there are bristles left in some places. Put them in a bowl of water with diluted vinegar in it and leave for 1, 5 hours. Then wash the product again, transfer to a saucepan, cover with water and cook over low heat under a lid for 2-2.5 hours, adding bay leaves and peppercorns. Salt the water half an hour before the end of cooking.
Remove ears from broth, cool, peel and cut into strips. Grate the cucumber and carrots with a Korean grater. Peel the garlic cloves and crush them in a mortar. Place all prepared dish ingredients in a large salad bowl, stir and pour over the soy sauce. Heat olive oil in a skillet or saucepan and season with salad.
Korean salad with pork ears
Ingredients:
- 1 boiled pork ear;
- 1/2 head of red cabbage;
- 1 small carrot;
- 1 onion;
- 1 bell pepper;
- 3 cloves of garlic;
- 100 ml of vegetable oil;
- 30 ml of table vinegar;
- 1 tsp each ground coriander, turmeric and sweet paprika;
- 1/2 tsp each salt and black pepper;
- 1 tsp sesame seeds.
Grate the garlic. Peel all large vegetables and cut into thin strips. Do the same with boiled pork ear. Lightly remember with your hands or a mashed potatoes the cabbage and onions until the juice appears. Combine everything in one dish, preferably glass, so that the beauty of the salad is visible. Season it with spices and salt, top with vinegar, boiling oil and stir immediately. Let the appetizer brew for half an hour, then sprinkle with sesame seeds and serve.
Hearty Pork Ears Salad
Ingredients:
- 2 boiled pork ears;
- 3 chicken eggs;
- 2 small heads of red onions;
- 1 can of canned peas (225 g);
- 20 ml of table vinegar;
- a pinch of ground black pepper;
- 4 tablespoons mayonnaise;
- salt.
Hard boil the eggs, peel and chop with a knife. Peel the onion and chop into half rings. Soak it in a 1: 4 vinegar solution with water for 10 minutes, then squeeze it out. Chop the pork ears randomly. Combine them with the rest of the food, green peas along with liquid and mayonnaise. Season the salad and add salt as needed. Soak it in the refrigerator for an hour before placing it on the table.
