It is necessary

    • For a savory fresh tomato sauce:
    • 4 large ripe tomatoes;
    • a small pod of hot red pepper;
    • 2 garlic prongs;
    • 20 g of vegetable oil;
    • 3 onions;
    • cardamom
    • turmeric
    • hops-suneli
    • ground coriander
    • salt.
    • For the canned tomato sauce:
    • bulb;
    • 20 g olive oil;
    • 3 cloves of garlic;
    • 400 g of canned tomatoes;
    • 10 g sugar;
    • ground black pepper
    • oregano
    • salt.

Instructions

Step 1

Make a savory fresh tomato sauce. Wash the tomatoes and peel them off. To do this, dip them in boiling water and keep them in it for one minute. Then place the tomatoes in cold water. After such manipulations, the skin is quite easily removed from them. Scroll the peeled tomatoes, onions, garlic and peppercorns through a meat grinder. The amount of hot peppers can be reduced to taste. Choose only ripe, meaty tomatoes for the sauce. You can use a blender or food processor instead of a meat grinder to grind vegetables.

Step 2

Pour vegetable oil into a small saucepan and heat it. Place the tomato paste in a saucepan and cook for about 5 minutes.

Step 3

Add spices, season with salt, and simmer the sauce until it thickens. This usually takes 15 minutes. Then remove the saucepan from the stove and let the sauce steep a little. Then put it in a gravy boat and serve. The savory tomato sauce prepared according to this recipe is great for pilaf. It can also be served with baked or boiled potatoes and any pasta.

Step 4

Make a canned tomato sauce. Tomatoes that have been canned in tomato juice work best. Wipe them in a blender. Strain the tomato paste through a colander to remove the skins and seeds. Set her aside for a while.

Step 5

Chop the garlic and onion finely. Heat olive oil in a skillet and save onion and garlic in it. Just don't fry them. Once the onions are softer, add the tomato paste, spices, sugar and salt. Cook the sauce over low heat until thick. A well-cooked tomato sauce should not be too thick or too thin. Pay attention to the amount of oil in it. If it floats on the surface, gently scoop it up with a spoon.

Step 6

Chill the sauce and serve it with meat, spaghetti. It is also ideal for greasing pizza base.
