Rolls familiar to Russian gourmets - California, Philadelphia, Alaska - came to us from America. This is an adaptation of Japanese cuisine to American tastes. However, there is nothing strange in the fact that our compatriots also liked them.

Instructions
Step 1
Prepare 2 cups of round rice. It is better to take special varieties intended for sushi and rolls - they have greater stickiness. Fill them with the same amount of cold water. Bring to a simmer and simmer for about 10 minutes. Then pour in the dressing made from 50 ml. rice vinegar, 30 ml. water and 10 g of granulated sugar.
Step 2
Cover with a lid, keep on fire for another 5-7 minutes, then remove from the stove, transfer to a wooden bowl and let cool. If you don't have a wooden bowl, line the enamel bowl with a folded canvas cloth. This must be done so that the excess liquid is absorbed, and the rice for the rolls has the desired consistency.
Step 3
Cut salmon fillets, avocados and cucumbers, mash the cheese - we will make Philadelphia at home. This is a roll - "changeling". The filling can be varied to taste. The main principle of cooking is that the rice is on top of the nori seaweed, and not vice versa. To make such rolls more convenient to eat, they are covered on top either with a piece of fish, or with caviar breading, as an option - with sesame seeds.
Step 4
Spread out a bamboo mat, place rice on top of it, then a sheet of nori seaweed, slightly dampened with water. Press with your palm to make them stick together. Mix cucumber, avocado and Philadelphia cheese, spread over nori. Form a roll, cut it with a sharp knife with a long narrow blade. Wrap each piece of the roll in a strip of salmon: you can not whole, but only the upper half.
Step 5
Combine rice with nori in a similar way for a California roll. Chop the crab meat, mix it with Japanese mayonnaise and fresh cucumber - the filling is ready. Wrap the roll, cut it, “bread” each piece in orange tobiko caviar. However, the color of caviar can be varied: it can also be red, black or even green - your choice will depend on the color of the rest of the ingredients.
Step 6
Brush the roll pieces with Japanese mayonnaise and bake in the oven. You will get a baked roll, cooked at home. You can use eel, chopped shrimp or mussels as a filling. Usually, baked rolls are eaten hot, but they are also delicious when cold. Serve with soy sauce, ginger and wasabi to delight your guests.
