Often in culinary recipes such an expression is found - "melt in a water bath". Inexperienced in cooking, beginners can refuse to cook any dish, not knowing that a water bath can be easily built in their kitchen with the help of improvised means.
It is necessary
-
- Take preferably dark chocolate varieties with a high content of cocoa butter
- Two containers of different sizes for a water bath
- Wooden spatula
Instructions
Step 1
Take two containers of different diameters. Moreover, the one that is larger must be metal, because it will need to be heated on the stove. You can take two pans of different diameters, as shown in the photo.
Step 2
It is better if the second container is made of stainless steel, but you can also use heat-resistant glass dishes. The walls of the containers should not be very high, otherwise it will be simply inconvenient for you to melt the chocolate. Pour some water into a larger container and put it on the stove to heat. The inside of the smaller container must be completely dry.
Step 3
Break a chocolate bar and place in the bottom of this container. Place it in another, where the water is already hot enough, but not brought to a boil. The water must not reach the sides of the chocolate container, otherwise it may get inside. It is not necessary to bring the water to a boil. Sometimes it is enough to maintain a water temperature of 70-80 ºС.
Step 4
While melting chocolate in a water bath, stir it constantly. This will help it melt evenly. Use a wooden spatula for stirring.
The temperature of the melted chocolate should not exceed 40-45 ºС, otherwise, upon subsequent solidification, a white bloom may form on it.
