Turkish delight is a popular oriental delicacy with a very pleasant and delicate taste. Sweetness is also considered a national dish in Greece. Sometimes the dessert is simply called with one word - Turkish delight. There is a fairly large number of its varieties, but the main components remain unchanged - sugar and starch.
It is necessary
- - 1 1/2 cups sugar;
- 1/2 cup cornstarch
- - 100 ml raspberry or strawberry syrup;
- - citric acid on the tip of a knife or 1 tbsp. a spoonful of lemon juice;
- - 1 glass of powdered sugar (for sprinkling).
Instructions
Step 1
Stir the berry syrup, lemon juice and sugar in a thick-bottomed saucepan, add about 100 ml of pure filtered water and cook over moderate heat until the granulated sugar is completely dissolved, stirring occasionally with a wooden spoon or spatula.
Step 2
When the mixture boils, remove the froth and reduce heat to low. Now boil the syrup to a hard ball test. To do this, drop a drop of the mixture into cold water - it should turn into a hard “caramel”.
Step 3
Dissolve the starch in very cold water in a 1: 3 ratio so that there are no lumps. Pour into a heat-resistant container and put on low heat. Cook until the mixture thickens, stirring occasionally. Remove the boiled starch from the heat.
Step 4
When the syrup has reached the desired consistency, add the starch mixture. Stir and cook for another 25 minutes until thickened over low heat, stirring occasionally with a wooden spoon.
Step 5
Cover a rectangular shape, baking sheet, or any suitable trays with parchment paper or cling film. Pour the slightly cooled mass on top and smooth the surface with a damp spoon. Let it set for 4-5 hours, you can put it in the refrigerator overnight.
Step 6
Cut the frozen mass into square pieces, and then roll in powdered sugar. Turkish delight can be stored in a dry cardboard box.
