For cookies, you will need: 200 g of cottage cheese, 100 g of sugar, 2 eggs, 100 g of butter, 20 g of natural honey, 200 g of flour, soda or baking powder from about a quarter to a third of a small teaspoon, zest of half a lemon, 100 g of powdered sugar, vanilla or vanillin to taste.

Melt the butter and, while it cools, combine the cottage cheese, sugar, egg yolks (set aside the whites for another dish). Pour a little cooled oil into this mass and mix everything. Add honey, vanilla or vanilla, flour, lemon zest. The dough should be smooth. Roll small balls from the resulting thick dough and, flattening, put the resulting plump cakes on a baking sheet (it must be greased with butter or margarine, you can also lay it out with baking paper).

Place a baking sheet with cookies in a preheated oven and bake the cookies (about 15-20 minutes, but the exact baking time depends on the size of the cakes) at a temperature of about 180 degrees. The cookie should turn golden. You can use icing to decorate the cookies. To do this, in a small bowl, mix two tablespoons of powdered sugar and a third of a tablespoon of water. The frosting should be thick but fluid, so add more powdered sugar if necessary. Place the icing in a pastry syringe and apply strips to the cooled cookies. Serve the cookies when the frosting is dry.
