  • - vinegar or lemon juice.

Step 1

Allow the butter to soften for a couple of hours before making the curd biscuits. Butter can be substituted with baking margarine or others. In this case, cottage cheese cookies will turn out to be tasty too.

Step 2

Separate the egg yolks from the whites. Do this more carefully so that even a drop of yolk does not get into the whites, otherwise they will not give a fluffy foam when whipping.

Step 3

Combine softened butter with sifted flour and rub. Add curd and stir. Now it's the turn for the yolks. Mash them first, then pour into the curd cookie dough.

Step 4

Quench the baking soda with vinegar or squeeze a tablespoon of juice out of the lemon. Wait until gas bubbles stop and pour the liquid into the curd dough. Mix everything, if the dough is thin, add flour. Ideally, it shouldn't stick to your hands. Wrap the cottage cheese dough with cling film and refrigerate for a couple of hours.

Crush the walnuts. Whisk the egg whites into a thick foam, gradually adding granulated sugar in portions. You are all set to fill the curd biscuits.

Step 6

Remove the dough from the refrigerator, remove the foil and divide the dough into 4 pieces. Sprinkle flour on the table, roll 1 part of the cookie dough on it into a thin rectangle-shaped layer.

Step 7

Brush the surface with beaten egg whites, sprinkle with chopped walnuts. Wrap the layer in a roll and cut into 2 cm pieces. You have got a cottage cheese cookie with a filling. Repeat with the other three pieces of dough.

Step 8

Lubricate a baking sheet with vegetable oil, if you are afraid that cottage cheese baked goods will burn, cover the baking sheet with oiled parchment paper. Place the cookies at some distance from one another and place them in a preheated oven for baking. This will take no more than 25 minutes.
