To cook meat with blood, you need to choose the right one. It must be paired. Meat that has been frozen is not suitable for this dish. An excellent option is young beef. Take the meat from the kidney, its color should be only dark pink and without veins. Do not buy meat that has already been cut, it may not be fresh.

Fry the meat only on the day of purchase. Slice it the same way just before cooking.

Do not wash the meat, but if you do, be sure to let it dry well or wipe it off thoroughly with a clean napkin, as the oil in the pan will splash heavily from the water. Cut the meat into strips across the grain 0.5 centimeters thick and about 5 centimeters wide. Don't hit it off. Salt.
Step 4
Pour a small amount of vegetable oil into the pan, put a few pieces of meat so that they do not come into contact with each other. Pour ½ teaspoon of vinegar on each piece of meat. Fry over medium heat for 1.5-2 minutes on each side in hot oil.

Make sure that no crust is formed on the meat. If a white foam separates from the meat during frying, it means that you have been sold really steamed and high-quality meat. If brown flakes stand out, then you are out of luck with the meat and, most likely, it was prone to freezing.

After cooking, by cutting the meat, you will see that it will not be completely fried and a slightly pink juice will come out of it.
Step 7
Eat meat with blood only hot, cutting off small pieces from it and eating bread and red onions. Since it is prepared very quickly, you do not need to do it a lot, because it is undesirable to heat such a dish.
