Step 1
Since the tripe has a very pungent smell of the insides of the animal, then before preparing dishes from it, you need to remove it with special processing. If you are using the entrails of a freshly skinned animal, then clean it of the remnants of the contents of the stomach. Wash thoroughly under running water. Then cut the scar into small pieces for the convenience of further work.

Scald the tripe with boiling water, after which you can easily scrape off the surface layer with a knife. Take a piece of tripe and place it on a wooden board. Hold firmly with one hand, and with the other, use a knife to scrape off the dirty layer.
Step 3
Rinse the cleaned scar with cold water. It should turn white or slightly yellowish in color. It is in this form that it is sold in the markets. But it is too early to cook dishes from it, since a specific smell is still present. Therefore, it is necessary to subject the scar to secondary treatment.
Step 4
Pour water into a deep bowl, add salt at the rate of 3 tablespoons per liter of water. Put the tripe in the brine for 3 hours. The water will darken and should be drained and repeated one or two more times. Usually, after such treatment, the unpleasant odor should disappear.
Step 5
If the offal still smells, then you can additionally soak it in a solution of salt and vinegar. Make the concentration of the solution at your discretion. After the tripe has lain in it for 2-3 hours, you should take it out, rinse it and put it into culinary processing.
Step 6
In the case when the smell is so persistent that it does not help, you need to apply hot treatment. To do this, place the tripe in salt water and cook for 20 minutes after boiling. After that, drain the water, rinse the scar with running water and put it to boil again. After repeating this treatment three times, the smell completely disappears.
