Pitahaya, also known as pitahaya or dragon fruit, has a juicy white flesh infused with tiny black seeds. This exotic fruit has recently appeared on the shelves of our stores, and many people are afraid to buy them, as they are poorly informed about how they are chosen and, most importantly, how they are eaten.

Step 1
Pitaya ripens in a completely different way than the usual fruit for us. The overall color of the fruit is not at all an indicator of its maturity. The yellow pitaya may well be more mature than the red one. It is worth paying attention to the color of neighboring fruits. The ripe dragon fruit is much richer in color than its neighbors. Yellow will have a golden hue, red will be bright red.
Step 2
Take the pitaya in your hands and squeeze it gently. Unripe fruits are hard and tough, while ripe fruits are soft. Do not press hard, as not much effort is enough to understand whether to buy this fruit or not. Examine the pitahaya for wrinkles, blemishes, and mildew. All these are signs of too old and overripe fruits.
Step 3
Put the pitaya in the refrigerator for a few hours before use. Remove the fruit, place it on a cutting board and cut it in half lengthwise with a sharp knife. Look at the pulp. The red or pink fruit has ripe white or pale pink flesh, yellow only white. Regardless of the color, the entire flesh of the fruit will be dotted with tiny black seeds. They are as edible as the seeds inside a kiwi.
Step 4
Use a knife or scissors to cut off the tips of the thorns on the skin of the fruit. This will help you keep it. Some people find it tastes best to eat dragon fruit with a spoon, straight out of the halves. Others suggest cutting the halves into slices like an apple, peeling and adding to a fruit salad. Pitaya is also good as an addition to fruit cocktails and sorbets.
