To prepare friable cookies "Kurabye" you will need: 550 g of wheat flour, proteins of 2 eggs, 30 g of jam or puree of apple (or apricot), 150 g of powdered sugar, 350 g of butter (margarine). Roll each piece into balls. Flatten these balls into tortillas and make "petals" on them with a spoon, pressing down the dough with its edge. Decorate the center of the resulting flowers with jam. If the consistency of fruit puree or jam is thin, you can mix it with starch, at the rate of 1 tsp. fruit puree - ¼ tsp starch. Bake "Kurabye" at a temperature of 200-220 ° C for 10-15 minutes. until golden brown. Sprinkle icing sugar over finished products. Store cookies in an airtight container as they dry quickly.

To prevent the cookies from breaking and retaining their shape, after baking, let them cool right on the baking sheet.

To prepare "Kurabye" in an oriental way (with spices), you will need: 250 g of butter, 70 ml of milk, 2, 5 tbsp. flour, 200 g icing sugar, 50 g honey, 1 tsp. ground lemon zest, 8 pcs. cloves, 1 sachet vanilla, 3 pcs. cardamom. Pound softened butter into a mass, mix with lemon zest, ground spices, powdered sugar, honey. Rub again until the mass is homogeneous. Pour in milk, stir. Gradually adding flour, knead the dough. Then put it in the refrigerator for 15 minutes. Roll out a layer of dough 1 cm thick. Using a glass, cut out the cookies, form "petals" with a spoon, put on a baking sheet. Decorate the top of the cookies with jam. Bake the products in the oven at 190-200 ° C for 5 minutes. Sprinkle the warm "Kurabye" with powdered sugar mixed with vanilla.

Instead of applesauce or apricot puree (jam), you can use any other.

The almond "Kurabye" turns out to be very tasty. In addition to the main ingredients, the dough contains almond kernels. To make cookies, you will need: 100 g of butter, 150 g of flour, 50 g of peeled almonds, 50 g of sugar, icing sugar. Grind the almonds with 1 tbsp. l. Sahara. Sprinkle flour on the table, make a depression in the center and add chopped almonds. Cut the softened butter into pieces, add to the flour, add sugar. Knead the dough, wrap it in plastic wrap and put it in the refrigerator for half an hour. Place the dough on the table, cut it into small portions. Roll long flagella out of them. Cut them into 10 cm pieces and bend them so that you get the letter "V". Grease a baking sheet with butter and sprinkle with flour. Place "Kurabye" and bake for a few minutes in the oven preheated to 200 ° C. Remove the finished cookies from the baking sheet with a spatula, sprinkle with powdered sugar, transfer to a dish and refrigerate.
