Or because, in terms of protein content, it competes with meat and is an inseparable attribute of a vegetarian table. And certainly not least because it has a wonderful nutty aroma, goes well with seasonings and is incredibly tasty.

Instructions
Step 1
Place dried beans on a wide horizontal surface and disassemble it - separate debris, pebbles, substandard beans. You can identify them by wrinkled skin, very dark or very light skin against the general background, and other possible flaws.
Step 2
Place the beans in a colander and rinse under cold running water.
Now you need to soak the beans overnight. Pick up a wide and deep saucepan, place the washed beans in it and top up with water. There should be twice as much water as beans.
Step 3
The next day, drain and pour in fresh water, in the same proportion. Place a saucepan on a fire and bring the water to a boil. Reduce flame to moderate and simmer for at least one hour.
Then follow the recipe you have, for example, in the soup you will need to put the beans, boiled until half cooked, and for the lobio, the beans should be boiled down to order.
Step 4
If you don't have time to soak your beans, try another method.
Place water in a large saucepan and bring to a boil. Gently pour the beans from the colander into the boiling water. Close the lid and let the water boil again. After two minutes, turn off the heat and, without opening the lids, leave the beans for an hour.
Step 5
After an hour, remove the lid and stir the beans. Return the pot to the heat and simmer until cooked to the desired degree.
