- For lobio:
- - 1 kg of red beans;
- - 5 red onions;

- - 100 g sour cream;
- - 2 tbsp. granular mustard;
- - 1/2 tsp salt;
- - 20 g of dill.

Step 1
Fragrant red bean lobio
Soak beans in cold water for 8 hours, then drain in a colander. Transfer it to a saucepan, fill with water so that it covers the food by 2 cm, and put on high heat. After boiling, reduce the cooking temperature to medium and cook the beans for 40 minutes, stirring occasionally.
Step 2
Peel and finely chop both onions and chop the celery. Crush the beans with a puree press and add prepared vegetables to them. Stir everything, mix with crushed nuts, chopped hot peppers and cilantro, crushed garlic, add salt and simmer for another 15-20 minutes under the lid. Serve hot or cold.
Step 3
Vegetarian red bean cutlets
Drain liquid from canned food. Thinly chop the bell pepper and onion, grate the garlic. Sauté all fresh vegetables in a little vegetable oil, cool and transfer to a blender bowl along with beans, lentils and parsley leaves. Mash everything into a puree and mix well with water, starch, bread crumbs and salt to taste.

Form flat patties by scooping up the beans with a tablespoon and drench them in flour. Place the lean round meat in the heated vegetable oil and grill in a regular or coated pan for 5 minutes on each side. Eat them this way or make veggie burgers.
