Step 1

The cooking process is simple and does not require any special skills. We take the eggs, separate the whites from the yolks and begin to beat the whites until stable peaks form, then add half the sugar (75 g) there and continue to beat for about 1 minute.

Step 2

Beat the yolks with the remaining (75 gr.) Sugar until it is completely dissolved. With gentle movements, we mix cocoa into this mixture (this can be done with a mixer, but at low speed or with a special spatula for dough with rubbing movements).

Step 3

Very slowly and carefully add protein foam to this mixture so as not to lose airiness.

Step 4

Put parchment paper on a baking sheet and grease liberally with butter. Pour the resulting dough there and carefully distribute.

Step 5

We heat the oven to a temperature of 180 degrees. We put a baking sheet there for 30-35 minutes. Do not be alarmed if you see that your dough first rose and then fell - this is normal.

Step 6

Cut the cooled cake into 4 equal parts, separating it from the paper.

To prepare the cream, you need to heat the cream very much, but do not boil, add pieces of broken chocolate to them and stir until the chocolate is completely melted.

Grease the cakes with cream, not forgetting about the sides of the cake. Then we put the resulting masterpiece in the refrigerator for 1 hour. At the end of this time, enjoy a culinary masterpiece with an unusually delicate chocolate flavor.
