It is necessary

  • - 175 g sweet almonds;
  • - 10 pieces of bitter almonds;
  • - 2 tablespoons of cherry vodka;
  • - 100 g of icing sugar;
  • - 1 egg white
  • or
  • - 1 glass of almonds;
  • - 1 glass of granulated sugar;
  • - 2-3 drops of almond essence;
  • - 0.25 glasses of water;
  • - icing sugar;
  • - food colorings.

Instructions

Step 1

Prepare the marzipan mass. Take 175 g sweet almonds and 10 bitters. Pour hot water over the nuts.

Step 2

Peel the almonds and pass the kernels through a fine-grated meat grinder twice.

Step 3

Add 100 g of powdered sugar and 1 egg white to chopped almonds. Stir everything thoroughly.

Step 4

Place the mixture in a mixer and beat until a smooth, plastic mass is obtained. At the end of cooking, flavor the almond mass with cherry vodka. Marzipan is ready for sculpting.

Step 5

To prepare marzipan mass according to the second recipe, put 1 cup of unpeeled almonds in boiling water and cook for 1-2 minutes. Discard the nuts in a colander.

Step 6

Dry the nuts lightly with a paper towel.

Step 7

Remove the skin from the almonds after they have cooled.

Step 8

Rinse the kernels in warm water and place in a frying pan.

Step 9

Stirring constantly, fry the almonds in a hot skillet without adding oil for 10-15 minutes.

Step 10

Place the toasted nuts in a blender and chop until puree.

Step 11

Mix 1 cup of granulated sugar with 0.25 cups of water. Put the dishes with the mixture on the fire and heat until all the sugar is completely dissolved, and from the cooled syrup you can roll a hard, flexible, stretchy ball.

Step 12

Put chopped almonds into the syrup, boiled to the desired consistency, mix well and continue to heat for 3-4 minutes, stirring constantly.

Step 13

Add 2-3 drops of almond essence to marzipan.

Step 14

Place the marzipan mixture on a wide, flat plate. Cover it with cling film and cool.

Step 15

Pass the cooled marzipan through a meat grinder.

Step 16

Sprinkle the table with powdered sugar, put the marzipan mass on it and roll out with a rolling pin. From this blank, you can cut figures with a knife or molds, or you can prepare volumetric figures using plasticine sculpting techniques.

Step 17

Marzipan can be used to coat the top of a cake or use it as a layer between the cakes. To do this, roll the mass into a layer several millimeters thick, cut a circle equal to the diameter of the cake and place it on the cake.

Step 18

Form the bottom of the cake with a narrow strip of marzipan. It will look neater.
