Step 1
Choose medium-sized, fresh, strong mushrooms for frying. Peel the mushrooms off and peel the legs. Slice the mushrooms in half lengthwise. Dip the mushrooms in boiling water for five to six minutes. Then drain the water thoroughly so that when frying, the mushrooms release as little water as possible. You can dry the mushrooms on a towel. Melt the vegetable oil in a skillet. Dip the mushrooms into the skillet. Fry the mushrooms until a slightly golden brown crust is formed, first on one side, then on the other side. At the end of frying, lightly salt the mushrooms.
Step 2
Wash and peel potatoes. Cut the potatoes into small slices and rinse in cold water. Let the water drain and pat the potatoes dry on a napkin. Heat a skillet with butter. Place the potato slices evenly in a hot skillet and fry with even heat. Stir the potatoes from time to time. When the potatoes are brownish, season with salt.
Step 3
Transfer the fried potatoes and mushrooms to one pan. Stir the ingredients gently and fry some more. To make the potatoes with mushrooms juicier, cover the pan with a lid. To give the dish an even more pronounced specific taste, combining potatoes and mushrooms, add onions pre-sautéed in butter.
Step 4
You can also fry mushrooms with potatoes in another way. Peel the mushrooms and blanch them for six minutes. Remove the water from the mushrooms and cut into slices. Fry in butter, put in a saucepan and cover with sour cream. Add tomato paste, salt and black pepper to the mushrooms. Cover and simmer. Chop the onion separately and sauté in butter. Cut the prepared potatoes into slices and fry evenly on all sides in a pan until cooked, add the prepared onion and a mass of mushrooms stewed in sour cream. Cover and simmer for a while to soak each other.
