Potato casserole is a very tender and tasty dish. Bell peppers give it freshness, and melted cheese gives it an interesting creamy flavor. Best served with fresh salad.

Instructions
Step 1
Peel potatoes, wash well. Cut large potatoes in half. Then boil it in salted water. Check the readiness with a knife - it should enter the boiled potatoes easily. Drain the water. Add butter and make mashed potatoes. If there is a mixer, then it is better to do this with it so that there are no lumps left. In this case, the dish will be more tender. If you wish, you can skip the mashed potatoes, just cut the boiled potatoes into small pieces. It is better not to use raw potatoes in a casserole, as they cook in the oven for a long time, which can lead to burning of the cheese.
Step 2
Coarsely grate the processed cheese and add it along with two eggs to the warm mashed potatoes. Mix thoroughly. The cheese should dissolve slightly.
Step 3
Cut the bell pepper. Remove core and seeds. Cut into small cubes. Chop the dill herbs. Grate hard cheese on a coarse grater. Combine bell pepper and dill with mashed potatoes. Season with salt and pepper to taste. Stir. After the potato mass has cooled, add the grated hard cheese and stir again.
Step 4
Line a baking dish with parchment paper. Lubricate it with vegetable oil and lay out the potato cheese mass. Preheat the oven to 180 degrees and place the casserole in it for 25 minutes. At the end of baking, brush the casserole with a beaten egg, then return to the oven for another 5 minutes. You can also sprinkle the dish with grated hard cheese. The result is a delicious cheese crust.
Step 5
Mix 1 tbsp. flour and 1 tbsp. butter. Bring the sour cream to a boil and, stirring constantly, pour it into the white pass. Season with salt and pepper. Bring the sour cream sauce to a boil again and turn off the heat.
Step 6
Let the potato cheese casserole cool in the mold. Cut it into portions and place on plates, drizzle with sour cream sauce and sprinkle with chopped herbs.
