Potato casserole is a simple and tasty dish. There are different ways to prepare it, but it is best to use it for baking minced meat and potatoes without prior heat treatment.
It is necessary
- - 700 g of potatoes;
- - 500 g of minced meat from any meat;
- - 50 g fat tail fat or regular lard (optional);
- - 2 tbsp. cream;
- - two medium-sized bulbs;
- - two eggs;
- - 2 tbsp. 10% yoghurt without additives;
- - 80 g of wheat flour;
- - a clove of garlic;
- - seasonings for potatoes and meat (optional);
- - 70-80 g of cheese;
- - salt (to taste);
- - ground black and / or allspice (to taste).
Instructions
Step 1
Wash the meat, remove all excess - films, remnants of bones, veins, bruises. If you use lamb, then be sure to remove the lymph nodes: it is they that give the very smell and taste, because of which this meat is not liked by everyone. Cut into small pieces. Peel one onion and garlic.
Step 2
Pass meat, bacon, onion and garlic through a meat grinder, salt and pepper, add seasoning for meat and cream. Mix thoroughly. Pass through a meat grinder again, cover with cling film and refrigerate for a couple of hours - the meat should be marinated.
Step 3
Peel the second onion, chop finely and fry in a pan in unrefined sunflower oil. In this case, you should not use olive oil, since it does not have the qualities necessary for this dish and will worsen its taste. Fry over low heat - this is how you get soft, golden onions with a pleasant aromatic note of fried seeds. When finished, transfer to a bowl and cool.
Step 4
Peel the potatoes, wash, drain and grate into the same bowl. Salt and stir. Add flour and eggs. Mix everything thoroughly again.
Step 5
Place a baking dish (glassware works great) in the refrigerator for 5 minutes to cool. Remove, brush with butter. It is not worth using margarine on vegetable fats for these purposes - it is harmful and impairs the taste. Refrigerate again for 5 minutes.
Step 6
Take out the mold, put the potatoes and minced meat in three or five layers (2/1 or 3/2, respectively). The bottom and top layer should be potatoes. Make a foil “lid” on top.
Step 7
Preheat the oven to 200 ° C and place the dish to bake. After 5-7 minutes, lower the temperature to 170-180 degrees and bake for about 30 minutes.
Step 8
Grate cheese, mix with yogurt. Take out the casserole, cover it evenly on top with the prepared mixture and bake further at 120 ° C until tender (about 25-30 minutes).
Step 9
Arrange the dish on plates, garnish with fresh herbs. Serve with vegetables or vegetable salads.
