    • 300 g chicken liver;
    • 1 glass of milk;
    • 1 onion;
    • 2 apples;
    • 1, 5 glasses of dry white wine;
    • 3 eggs;
    • Bay leaf;
    • 100 g butter;
    • vegetable oil;
    • salt and pepper.

Instructions

Step 1

Make a tender chicken liver pate. Start by preparing the offal. Cut the liver and cover with milk. Leave it in a cool place for a few hours.

Step 2

Take care of apples. Bake them in the oven or microwave until soft. Then peel the fruit, remove the tough core, mash with a fork until puree and place in a food processor.

Step 3

Peel the onion, chop finely. Fry it in hot vegetable oil for 5 minutes. Place the fried onions with the apples.

Step 4

Melt the butter in a saucepan. Pour it to the rest of the ingredients in the bowl of the food processor, add wine. Grind the bay leaf into a powder and pour it into the mixture. Season with salt and pepper. Blot the chicken liver with a paper towel to remove any remaining milk and place it in the bowl of the food processor. Break the eggs in the same place. Grind the mass in a combine until smooth.

Step 5

Pour the resulting pate into a greased baking dish. Cover it with foil to prevent the food from burning. Preheat oven to 180 degrees. Put the pate there for 40-50 minutes. Readiness can be determined by color - the mass should turn grayish.

Step 6

Cool the finished pate by transferring it to another container. It must be served cold, it is best stored in the refrigerator in a package with a lid. However, keep in mind that even in such conditions, it is advisable to consume the dish within a few days.

Step 7

Cut the pate into portions before serving. It should be accompanied by a fresh baguette or regular bread toast. Fresh grain buns are also fine. Lettuce, gherkins and olives will also be a good addition to this dish. The delicate pâté will go well with a variety of white wines such as sauternes. Apple cider can also be an interesting option.
