Celery Root, or Root Celery, is a variety of this plant that is grown for a round, succulent root rather than lush and aromatic stems. Root celery has been known and loved by chefs since Roman times. The deceptively ugly, gnarled vegetable hides a delicate sweet creamy white flesh under its dirty and wrinkled skin.

- Apple soup with celery

Step 1
Choose firm celery roots that are too heavy for their size. If some kind of greenery is preserved at the top of the root, pay attention that it is fresh and bright, in no case withered and yellowed. Celery roots are not easy to peel, so go for the smoothest specimens.
Step 2
Whatever you're going to cook with root celery, the first step is still peeling the root vegetable. Cut off the stems and roots, take a vegetable knife and cut off the peel with one "tape", then carefully scrape out all the grooves, cut out doubtful areas.
Step 3
Cut the celery into cubes or slices, depending on the type of dish you are preparing. Soak the root vegetable in water that has been acidified with lemon juice to keep the flesh creamy white and not covered in ugly dark spots.
Step 4
Raw celery has a distinct aroma and flavor that dominates various salads, so pair it with vegetables and fruits with equally strong flavors, such as carrots, apples and beets.
Step 5
Boil celery root in chicken or vegetable broth for a wonderful puree soup. You can pre-fry the celery slices in butter, just like in the apple celery soup recipe.
Step 6
Apple Celery Soup Melt the butter in a large heavy-bottomed saucepan over medium heat and sauté the apples, celery and onions. Fry for about 15 minutes, until the apple wedges are transparent. Pour in broth, cover and bring to a boil. Reduce heat to medium and simmer for another 25 minutes. Puree the soup in a blender, pour back into the pot and season with salt and pepper, and puree the green onions and oil in the blender. Bake the bacon on baking paper in the oven until long crispy strips are formed. Serve the puree soup with onion oil and crispy bacon.
Step 7
Boil root celery along with potatoes or other vegetables for a delicious puree. Take no more than 1/5 of the total amount of celery vegetables. For dishes with a strong taste and aroma, such as spicy pork, you can serve puree from one celery.
Step 8
Celery root puree Place chopped celery in milk, bring to a boil, reduce heat and simmer until soft. This will take about 20 minutes. Turn off the fire. Use a slotted spoon to remove the pieces of celery and puree them with a crush, gradually adding hot milk. Mix the oil with lemon juice. Add to puree. Season with salt and pepper.
Step 9
Stew celery with meat or poultry. Fry the pieces of celery in a skillet and add as a side dish to your main course. Bake the sliced celery the same way you would bake potatoes.
