In winter, fresh vegetables are sorely lacking. And to make it easier to survive even this difficult period, you can support yourself with vitamin reserves. Summer is the best time to prepare homemade preparations. For example, try making a vegetable salad. It is not at all difficult to cope with it, but then it will be very pleasant to open the jar and enjoy the delicious taste. Such a dish will serve you as an excellent appetizer for many dishes and will be a worthy help in cold weather.

Homemade Ingredient List

- eggplant - 1 kg;

- red bell pepper - 1 kg;

- juicy fleshy tomatoes (you can take overripe ones) - 1.5 kg;

- carrots - 0.5 kg;

- onions - 0.5 kg;

- garlic - 8-10 cloves;

- sunflower oil - 100 ml;

- vinegar 9% - 50 ml;

- sugar - 2 tbsp. l. without a slide;

- salt - 2 tbsp. l. without a slide;

- hot chili pepper - 1/4 pcs. (optional);

- a saucepan (for example, aluminum).

Recipe for cooking vegetable salad for the winter

In order to make a delicious vegetable salad, you first need to prepare the vegetables. Peel onions, carrots and garlic. Remove the stem from bell peppers and eggplants, peel the seeds from the pepper. After that, rinse all vegetables under running water and dry.

Divide the tomatoes into 4-6 parts. Then mince them and place them in a large saucepan along with the garlic and hot chili peppers. If you don't have a meat grinder, you can use a blender or grater. They can also be chopped with a knife. The degree of pungency of the dish can be adjusted to your taste: if you want the dish to turn out sharper, then grind the pepper along with the seeds, if you like a less piquant taste, then it is better not to use the seeds.

You can choose how you want to cut the rest of the vegetables to your liking. The main thing is that the pieces are not very large. Alternatively, grate the carrots on a coarse grater. Cut the eggplants into four longitudinal slices, and then chop them into a quarter-circle, 5 mm thick. Cut the bell pepper into cubes or small pieces. Onions - in half rings. Once all the vegetables are prepared, send them to the pan with the tomatoes, garlic and chili.

It remains to fill our workpiece with seasonings. Add sugar, salt, 9% vinegar and sunflower oil, then mix well together. Then place the pot on the stove, cover and, stirring occasionally, bring to a boil. As soon as the winter stock boils, reduce the temperature to a low value and cook for one hour, remembering to stir from time to time.

Sterilization of cans

While the vegetable salad is being prepared, let's sterilize the cans. You can do this in a variety of ways. For example, it is convenient to use the oven. Take several 500 or 700 ml jars, wash them with detergent and, while they are not dry, place them in the oven with the neck down. Then set the temperature to 120 degrees and leave the jars for 15 minutes.

Final stage

When the salad is ready, spread it hot over the prepared jars, roll up (the lids must also be sterilized) and put the lids down in a cool dark place.

Such a vegetable salad will surely help while away the winter and, possibly, will later become your favorite homemade preparation. Serve it with any meat, fish or side dishes.
