There are many recipes for various salads, but the most popular in the summer are vegetable options for these dishes. Preparing a vegetable salad quickly and tasty is not difficult. The advantage of these dishes is that their cost is much lower than meat ones.
It is necessary
- - 1 glass of couscous;
- - 2 tbsp. spoons of chopped shallottes;
- 1/2 cup unrefined olive oil
- - 30 g of lemon juice;
- - 1 medium fresh cucumber;
- - 500 g cherry tomatoes;
- - 2 tbsp. chopped parsley spoons;
- - 1 tbsp. a spoonful of mint;
- - salt (to taste).
Instructions
Step 1
Pour a glass of clean filtered water into a saucepan, boil it and add couscous (couscous can be made both at home from semolina and wheat flour, or you can buy ready-made cereals in the store). Salt, close the pan with a lid and leave for 30 minutes, during which time the cereal will absorb all the liquid and swell. After the specified time has elapsed, transfer the finished couscous to a plate to cool.
Step 2
Peel the onion, wash the cucumber, herbs, tomatoes. Finely chop the parsley, onion and mint, cut the cucumber into cubes and the cherry tomatoes into two pieces. You can chop parsley and mint without using a knife, that is, just tear the leaves with your hands in random order.
Step 3
Take a deep bowl, pour olive oil and lemon juice into it, whisk the mixture. Add the onion to the resulting mass, cover the dish with foil and leave it for 15 minutes. You can do without this, but the taste of the dish will be less intense.
Step 4
Pour the resulting dressing into a bowl of couscous and mix well. Now add cherry tomatoes, diced cucumber, parsley and mint to the resulting mass. Season with salt, pepper and mix again. Now you can taste the salad: if there is not enough salt, then you can add salt, and also add your favorite seasonings.
