Homemade bread cannot be compared with purchased bread. By baking rolls and loaves in your own oven, you can be sure of their quality. In addition, the composition of the bread can be varied using different flours. Try to bake real rye bread - despite the seeming complexity, any housewife will master the process of its preparation.
Rye loaf
In the oven, excellent homemade loaves are obtained. Since rye flour does not contain gluten, it must be combined with wheat flour when kneading the dough.
You will need:
- 500 g rye flour;
- 500 g of wheat flour;
- 1 liter of water;
- 15 g dry yeast;
- 4 teaspoons of salt;
- 3 tbsp. tablespoons of vegetable oil;
- 1 tbsp. a spoonful of sugar.
Dissolve dry yeast and sugar in a glass of warm water and leave for a quarter of an hour. Transfer the mixture to a large bowl and add the remaining water, salt, and oil. Combine rye flour with wheat flour and add portions to the yeast mixture. Knead a soft dough - it should become plastic and homogeneous. Place it in a heated bowl and cover with plastic wrap. Let the dough sit for an hour - during this time it should double in size.
Transfer the dough to a floured board. Knead it for a few more minutes, then divide it into 3-4 pieces. Roll each into a bun and place on a baking sheet, greased with butter and sprinkled with flour. Place the baking sheet in the warmth for proofing for an hour. During this time, the koloboks will increase in size. Make a cut on each loaf with a knife and dust the surface with flour.
If you like a glossy crust, you can brush the loaves with sweetened water, milk, or a beaten egg.
Place the baking sheet in an oven preheated to 220 ° C. Bake the loaves for about 40 minutes, then remove them from the baking sheet and chill on the board, covered with a linen towel.
Rye bread with additives
According to the above basic recipe, you can bake delicious bread in the form of small loaves. To do this, you need refractory rectangular shapes. Crushed walnuts, olives or olives cut into slices, onions pre-fried in vegetable oil, grated spicy cheese, almond flakes, pumpkin or sunflower seeds can be used as additives. These ingredients are mixed with the flour before combining it with the yeast mixture.
You can also add sweet ingredients to the dough - chopped dried apricots or prunes, dates, cinnamon, raisins.
Divide the dough with additives into three parts and place each in a greased pan. Leave the bread for proofing, and then decorate the crust of the future loaves. Brush it with milk or sweet water and sprinkle thickly with cumin (for unsweetened) or poppy seeds (for sweet bread). To make the crust more glossy, five minutes before removing the bread from the oven, once again brush the surface with water or milk.
