Vegetable mixture with rice is not only an excellent light side dish for fish and meat, but also an independent dish that can be used during fasting and even with diets. And most importantly, the ingredients can be changed during the cooking process, each time making new combinations.

It is necessary

    • rice - 1 glass;
    • onion - 1 pc;
    • carrots - 1 pc;
    • Bulgarian red pepper - 1 pc;
    • bulgarian yellow pepper - 1 pc;
    • vegetable oil;
    • salt and pepper to taste.

Step 1

Sort the rice thoroughly, removing any spoiled kernels, and rinse it in cold water, changing it several times in succession, until the rice is completely crumbly. Thanks to this, the grains will not stick together, which will make the dish even tastier and more beautiful.

Step 2

Pour two glasses of cold water over the rice and put on fire. While the water is boiling, be sure to stir the cereal to prevent it from sticking to the bottom of the pot. After boiling, salt to taste, but remember that rice does not absorb salt well, so you need to pour it a little more than is required for any other cereal. Drain the finished rice, which should be a little hard, into a colander and rinse lightly with water.

While the rice is cooking, peel the vegetables and cut into small pieces. Place the vegetable mixture in a skillet with heated vegetable oil and sauté over low heat for 10 minutes. In this case, it is imperative to ensure that the vegetables do not burn, otherwise the dish will be spoiled.

Step 4

Season with salt and pepper to taste. You can also add whatever seasonings you like. Then add boiled rice to the vegetable mixture, carefully move everything, close the lid and steam in a pan for a few more minutes. Put the finished dish in the middle of a flat plate with a small slide and decorate with a sprig of dill.

If desired, the vegetable mixture can be prepared with a wide variety of vegetables, adding more ingredients or substituting one for the other. For example, you can add canned corn, tomatoes, asparagus, or beans. And if you like greens, chop them finely and add also to the ready-made dish.

Step 6

And mushrooms will help make the vegetable mixture more satisfying. Only they need to be finely chopped and fried until tender in a separate pan, and at the end added to rice and vegetables.
