Potato pancakes are a popular and fairly simple dish to prepare. If you are tired of mashed potatoes, fried potatoes, stews, and so on, then pancakes will be your potato salvation. They have a specific taste that cannot be compared with other cooking options for this root vegetable.
Use potato pancakes as a side dish carefully. Serve them with less nutritious meals, low in fat and oil, as the potato pancakes themselves are fried in a huge amount of vegetable oil.
What do you need to make potato pancakes?
- potatoes 0.5 kg;
- wheat flour 150 g;
- sour cream 1 tbsp. l.;
- eggs 2 pcs.;
- onions 2 pcs.;
- garlic 2 pcs.;
- salt and pepper to taste;
- vegetable oil 100-150 ml;
- dill to taste.
How to cook potato pancakes?
- All vegetables must be peeled and rinsed with water.
- Take a grater and potatoes with onions, grate on a large rib. Add a tablespoon of sour cream to this mixture and stir. It is better to take sour cream 15% fat. It is needed so that the potatoes do not become dirty gray.
- Chop the garlic and dill finely. Add to vegetable mixture. Season with salt and pepper to taste, stir.
- Add two chicken eggs. Take a sieve and sift the flour into a bowl. Mix everything well again.
- Due to the fact that there is a lot of starch in the potatoes, the potato juice will start to separate until the moment you reheat the pan. To make the potato pancakes crispy, you need to either squeeze the mixture hard, or grind each ball through a sieve before frying. It is not necessary to grind strongly, it is enough that the excess juice will drain.
- Take a skillet, pour oil into it and fry the pancakes until crisp.
