Let's prepare a dough for the Easter cake. Dilute yeast in warm milk, mix with 500 g of flour, cover and place in a warm place for 3 hours (at t 36º) or for 6 hours (at t 24º). Beat the egg whites into a foam. After the dough increases and begins to settle, add the egg yolks, mashed with sugar, salt, melted butter and stir. Next, stirring gently, add the whipped egg whites, vanillin and stir in the remaining flour. It is necessary to knead the dough until it is easy to lag behind the hands. Place the prepared dough in a warm place again. After the next rise, add the washed dry raisins to the dough and stir.

Thoroughly coat the molds on the inside, put a circle of oiled parchment paper on the bottom or sprinkle with breadcrumbs. With our hands moistened with water, grab a small mass of dough, form a lump with a smooth surface and place in a mold up to half the volume. We install the forms in a warm place and wait for the cakes to rise to the brim. At this moment, there should be no extraneous knocks and drafts in the room. When the cakes rise, grease them with an egg and put them in a preheated (up to 180 ° C) oven. We bake for 45-60 minutes, depending on the weight of the cake. Readiness can be checked with a wooden stick. If, when piercing the cake, the removed stick is dry, the cake is ready, if traces of dough are visible on the stick, we continue baking. Pour the finished cake with sugar glaze and decorate with ready-made caramel crumbs or coconut flakes.
