Remove the kefir from the refrigerator so that it is at room temperature, and in a separate bowl, mix with an egg, sugar, salt. Mix well with a whisk. Having mixed everything, add soda and flour to the same vessel at the same time (do not add it before).

Now start kneading the dough, it will seem thick, but that's the way it should be, don't worry. Remember that you need to stir the dough all at once, and no longer stir at all. Now set the dough aside for 10-15 minutes and start preparing the pan for frying.

By the way, amusing things happen to the dough, kefir, reacting with acid, will begin to bubble and the dough rises. Now turn on the stove and place a frying pan on top of it. After the pan is warm, pour the oil into it.
Step 4
While the oil is heating, scoop the dough from the pan, brushing it against the very wall. Do everything carefully. Then put the dough in the skillet, but don't be in chaos or tear it up. Remember that the dough will increase in volume when frying, so do not put the pancakes too close to each other.

The pancakes immediately show when they need to be turned over, because if they have already fried on one side, then their edges become fried. Reduce the heat with each new batch. For serving, garnish the pancakes with jam, sour cream, honey, condensed milk.
