Samsa is a national Uzbek dish that has become popular in Russia for a long time. Samsa is cooked with lamb meat. Its recipe is not simple, but it is quite possible to cook at home.

It is necessary

  • - baking sheet;
  • - parchment.
  • For the test:
  • - starch;
  • - flour 4 tbsp. spoons;
  • - chicken egg 1 pc.;
  • - warm water 1 tbsp. the spoon;
  • - butter 100 g;
  • - salt 0.5 teaspoon.
  • For filling:
  • - lamb 0.5 kg;
  • - mutton fat;
  • - onions 2 pcs.;
  • - salt;
  • - parsley and dill;
  • - spice mixture of peppers.

Instructions

Step 1

Add the egg, salt and butter to warm water. Whisk with a fork and stir until the salt dissolves. Then gradually add flour, while continuing to stir the dough. When the dough is thick, place it on the table and knead it for a firm dough. Divide it into three parts. Roll each part into a ball. Leave on the table, covered with a napkin for 30 minutes.

Finely chop the meat and some lamb fat. Add chopped onion, salt, pepper mix to taste, and chopped herbs. Mix the whole mass.

Step 3

Take 1 ball of dough. Roll it on starch to a thickness of 2-3 mm. Melt the butter and spread it over the dough. Leave it to dry. Roll out the second layer of dough in the same way. Wrap it on a rolling pin and transfer it to the first layer of dough. Also lubricate it with oil.

Step 4

Roll out the third layer, transfer it to the first pieces and brush with oil. Before placing the dough layer on top, let the butter from the bottom layer solidify!

Step 5

Once the butter has completely solidified, start rolling the roll. You should start from the middle. Start cutting pieces 1, 5 cm thick from the middle with a sharp knife. Now, carefully begin to roll the cake from above with a rolling pin. Spread the filling on the side that was rolled out. Pinch the dough in a triangle shape. Put the samsa on a baking sheet lined with parchment, seam down. Bake for 40 minutes at 220 degrees.
