As they say in France, sauce is the soul of a dish. These delicate and flavorful sauces and oil-free dressings can help you diversify your meal if you're fasting or just want something new.
Chickpea sauce
Soak the chickpeas for a few hours, then boil them in salted water until tender. It is better to remove the upper hard shell from boiled chickpeas. To do this, hot chickpeas are placed in a bowl of cold water, and rubbed between the palms. Grind the chickpeas with a blender (adding a hot broth), add paprika, lemon juice and other spices and seasonings to taste to taste. This sauce is perfect for vegetables, rice dishes. It is also delicious with a wheat cake.
Guacamole
This sauce requires a ripe avocado. Mash the pulp until smooth, add lemon juice or good wine vinegar to taste, salt, pepper and a finely chopped clove of garlic. Garlic can be replaced with very finely chopped dill. You can add finely chopped juicy vegetables to this dressing: tomatoes, cucumbers, and chili peppers. Serve with vegetables, chips, or bread.
Pink sauce
Peel the tomatoes, chop them and simmer a little with salt, basil and a pinch of sugar. Add some tahini (sesame paste) to the sauce and stir. The sauce goes well with fried potatoes. If you're not on duty, serve pink sauce with grilled meat.
Bean dip
Soak and boil white beans until tender (it is better to choose tender varieties). Grind it in puree, adding vegetable broth. Add some chopped nuts, dried dill, salt and pepper to taste. The finished sauce should not be very thick. Serve in a small bowl with slices of vegetables and bread.
