It is necessary

    • 40 g dry yeast;
    • 1 kg 100 g flour;
    • 80 g sugar;
    • 25 g salt;
    • 350 ml of milk;
    • 1 kg 200 g butter;
    • 1 yolk;
    • chocolate or almonds to taste.

Instructions

Step 1

Get busy making dough. Dissolve a bag of dry yeast in a glass of warm water. Wait 10-15 minutes for the yeast to disperse slightly. Add a glass of flour and beat the dough with a whisk or mixer into a single mass. Then add the remaining flour, salt and sugar there. Pour milk into the mixture, put butter softened in the heat - 700 g. Mix everything with a mixer into a homogeneous mass. Roll the resulting dough into a ball, sprinkle with flour and put in a bowl. Cover it with a towel and place in a warm place for one hour.

Step 2

After settling the dough, knead it with your hands, wrap it in plastic wrap and put it in the refrigerator for two hours. Then take it out and roll it out in the shape of a rectangle. Cover two thirds of the dough layer with butter, then fold the layer three times so that the butter is inside. Roll it to length, then fold it and roll it out again. Repeat the operation at least three times, but without adding oil. Do the same with the second part of the test. After that, put the resulting folded layers in the refrigerator for another two hours.

Step 3

Remove the dough from the refrigerator and roll it out to length again. Use a knife to cut out the croissants. They should be isosceles triangles with a fairly narrow base. Start forming rolls. Roll the dough into a roll starting at the base of the triangle. As a result, you should end up with a bagel-like baked product. Place croissants on a greased baking sheet. Cover the baked goods with whipped egg white to create a golden brown crust. Bake the French dessert in the 200-degree oven until the croissants are browned.

Step 4

You can add toppings to the croissants if you like, although they are not included in the classic recipe. Cut the chocolate bar into small cubes and place them in the middle of the triangle before rolling the croissant. You can also add almonds, cut into thin petals, inside.
