Fresh peanuts have tightly adhered kernels to the walls of the rind that will not budge even when shaken vigorously. If, when shaken, a sound resembling a rattle is heard, this indicates that the nuts are no longer fresh and dry.

Peanuts must be prepared in advance before roasting them directly. Purchased raw peanuts should be carefully sorted out. It should not contain any dried or damaged nuts. It is also necessary to exclude foreign objects, shell remnants or pebbles. Then rinse the peanuts with a high pressure of clean water. This must be done quickly so that the nuts do not have time to get wet. Gently line the clean nuts in an even layer on a dry towel and wait until they are completely dry. Prepare the oven while drying the nuts (preheat to 180-200oC).

The baking tray or any cooking container that will cook the nuts must be perfectly clean and dry. There is no need to grease them with oil, because the peanuts are quite oily. Roasting peanuts in the oven is much easier than roasting in a pan. In order for the nuts to be perfectly roasted, you need to spread them on a baking sheet in an even thin layer. The thinner the layer of peanuts is, the better it will be roasted.

The most ideal distribution of peanuts when roasting in the oven is to stack them in one layer.

Periodically, you need to mix the nuts by shaking the baking sheet slightly. But there is no need to rush to stirring and very often open the oven. This significantly reduces the quality of the roast. It is enough to listen carefully, when the shell of the nuts begins to crackle, you need to mix them.

You need to fry nuts in the oven no more than twenty-five minutes. It should be borne in mind that the frying process continues until the hot nuts have cooled to room temperature, even if they look a little undercooked in appearance. The crucial moment for cooking peanuts comes when the nuts are taken out of the oven, because roasting them is only half the battle. You can simply sprinkle the nuts with salt and stir.

Some gourmets, in addition to salt, necessarily add various spices to their liking.

Instead of regular salt, you can use salt for Korean salads, which contains a lot of spices. A variety of seasonings are also great: ground red pepper, chili powder, or curry. In case you want a completely unusual taste, you can mix these seasonings with finely grated cheese and sprinkle the nuts with this mixture. The cheese sticks to hot peanut kernels and creates an unusually aromatic and appetizing crust.

After adding the spices, cover the peanuts with a deep bowl and wrap the top with a few terry towels. The slower the nuts cool, the more pleasant their taste will be. The best option is to soak the peanuts for half an hour or an hour. After that, put the nuts on a beautiful dish or vase and serve this culinary masterpiece to the table. You can decorate the dish with figuratively chopped cheese pieces.
