Step 1

Peel 2-3 onions and chop finely. Melt two tablespoons of butter in a skillet and sauté the onions until translucent. Boil 250 grams of champignons or porcini mushrooms until tender and cut into strips. Stir the onion and mushrooms in a skillet, put on medium heat and fry for 4-5 minutes. Be sure to stir, otherwise the onion may burn. Season with salt and pepper to taste. Boil water in a saucepan and salt it, boil two chicken legs with a total weight of 500-800 grams. Remove bones, cut meat into strips.

Prepare a sour cream dressing. To do this, dry two tablespoons of flour in a frying pan without oil, the heat should be medium. Add 20 grams of butter to the flour and mix thoroughly. Add 150 grams of sour cream and stir again. Slowly pour half a glass of cold milk into the flour in a thin stream. To prevent lumps from forming, stir the dressing while adding milk to the flour. Season with salt and pepper to taste. In terms of density, the dressing should resemble 20-25% sour cream.

Toss the chopped chicken and the chopped mushrooms in a bowl or deep bowl. Grate 150-200 grams on a fine grater. Divide the mixture into small refractory tins or portioned cups, top with the sauce and sprinkle with grated cheese on top. Bake the julienne in the oven until the cheese melts at a temperature of 180-190 C. You can also cook julienne in the microwave, but only in refractory cups. To do this, set the maximum power and bake until the cheese melts. Serve julienne hot.
