Step 1

Slice the chicken at the breast and back. Divide it into 2 parts and cut out all the bones from the inside, while being careful not to damage the skin. Leave the wings and legs as they are (with bones). As a result, you should have 2 identical fillet pieces.

Cover the meat with cling film and beat. Then make slant cuts. This is necessary so that it does not curl when frying. Salt the chicken, season with pepper and rub with a small amount of garlic, passed through a press.
