Meat from drumsticks or breast fillets are suitable for making a roll. Separate the flesh from the bones and beat with a kitchen hammer or the dull part of a knife blade. If the required piece of meat or poultry is not at hand, you can use minced meat.

You will need:

- 800 g turkey fillet or ready-made minced poultry;

- 150 g of hard cheese;

- parsley;

- 100 ml of vegetable oil;

- salt;

- 100 g of prunes;

- 1 pear of the Duchess variety;

- 50 g spinach;

- 50 ml of soy sauce;

- 1 onion;

- 3 cloves of garlic;

- 10 g butter;

- ground black pepper;

- 15 g of mustard;

- 3 branches of rosemary;

- 30 g of honey.

Also prepare: a cooking brush, baking sheet, kitchen hammer, cling film, toothpicks, or cooking string.

Prepare the meat. Cut a whole piece with a knife in the middle, as if making a pocket, but not completely. Divide the breast in the same way. You should get a layer about 0.5 cm wide, unfold it and beat it off with a kitchen hammer.

You can make several small rolls with different fillings, and then serve chopped up as a cold snack.

Prepare the marinade. Whisk in a blender or grind in a mortar by hand 50 ml vegetable oil, 1/2 onion, garlic, mustard, pepper and salt, and soy sauce. You should have a non-uniform, viscous mixture. Grate the meat on both sides, wrap in plastic wrap or several layers of foil, leave in a cool place for 2 hours. This marinade is suitable if you are using a whole piece of poultry.

Pour the prunes with boiling water, grate the cheese. Peel the pear and cut it into small cubes. Chop the spinach and parsley with a knife or randomly tear with your hands. Combine the filling ingredients other than the herbs and season with salt to taste.

Lubricate the prepared layer of meat with a thin layer of butter, preheated to room temperature. Then lay the parsley and spinach in an even layer, carefully lay out the filling. Wrap the edges of the turkey, use plastic to form a roll and press lightly on top. Peel off the film. Give the product its final shape with toothpicks or cooking floss.

To prevent the meat from losing a lot of juice during cooking, you can pre-fry the rolls over high heat for 1-2 minutes, and then bake in the oven.

Preheat oven to 200C. Coat a baking dish with vegetable oil, put a roll in it. Brush it with honey. Bake for 50-60 minutes, periodically pouring over the juice formed during the baking process. Then take out the roll, put it on a dish. Serve with baked apples, herbs and boiled potatoes on a separate platter or in portions.

The roll can also be steamed, then it should first be wrapped in cling film or foil. The dish turns out to be tasty and juicy if you boil the roll in slightly salted water. This recipe is perfect for those on a diet. The ingredients for the filling can be changed, for example, using pineapple instead of prunes. As fillers, not only sweet and sour foods, but also vegetables, such as a mixture of onions, garlic and carrots, are well suited.
