    • porcini mushrooms or champignons - 200 g;
    • ghee - 5 tablespoons;
    • egg - 2 pcs.;
    • ground crackers - 3 tablespoons;
    • salt and pepper to taste.

Instructions

Step 1

Scale fresh carp with a knife or special tool. Gut the fish, pull out the gills. The fins and tail do not need to be removed.

Step 2

Place the carp on a napkin or rag to remove the water. Rub the fish with salt and pepper on the outside and inside. Then grease the carp with sunflower oil also on both sides.

Step 3

Open the belly of the carp and secure it with toothpicks. This is necessary so that the fish is baked faster, and a tasty crust is obtained outside and inside.

Step 4

Place the carp on a greased baking sheet with vegetable oil. Place it in a preheated oven for about forty minutes. As soon as a golden crust appears on the fish, remove the baking sheet from the oven, place the carp on the dish, remove the toothpicks and sprinkle the fish with lemon juice.

Step 5

Carp can also be cooked in the oven with sour cream. Cut across the peeled carp. Pepper it inside and fry the slices on both sides in a skillet. Chop onions and carrots. Fry them until golden brown. Dissolve sour cream in 1/4 cup warm water.

Step 6

Place the carp pieces in a baking dish and place the onions and carrots on top of them. Season with salt, pepper and bay leaves. Pour sour cream over everything, cover the dishes with a lid and put in a hot oven for twenty minutes.

Step 7

Carp and mushrooms cook a little longer. Rinse fresh porcini mushrooms or champignons, cut them into thin slices, put in a frying pan, add oil, salt, ground pepper and a little water there. Simmer mushrooms over low heat, covered for ten minutes, remove from heat and cool slightly.

Step 8

Rub the prepared carp with salt inside and out. Mash the butter and raw yolks, beat the whites into a lather and add all of this to the stewed mushrooms. Pour ground crackers, salt into this mixture and mix well.

Step 9

Stuff the carp belly with the minced meat. Sew it up with white thread. Put the fish on a baking sheet, drizzle with melted butter, put in a hot oven for forty minutes. Remove the threads before serving. Serve the baked carp with chips and garnish with herbs.
