Chanterelles are mushrooms widely used in Russian cuisine. These mushrooms have an interesting, unique taste and are very healthy.

It is necessary

  • • Mushrooms "Chanterelles" - 700 g;
  • • Sour cream - 100 g;
  • • Ham - 200 g;
  • • Fresh cucumbers - 120 g;
  • • Pickled cucumbers, barrel - 200 g;
  • • Potatoes - 400 g;
  • • Onion-turnip - 120 g;
  • • Green onions - 1 bunch;
  • • Vegetable oil;
  • • Canned peas - 200 g;
  • • Light mayonnaise - 100 g;
  • • Sour cream - 80 g;
  • • Yogurt without additives, natural - 80 g;
  • • Chopped greens.

Instructions

Step 1

Rinse the chanterelle mushrooms well and cut them into slices.

Step 2

Peel off the top husk of the onion and cut it into thin half rings. Transfer the prepared half rings of onion to the heated vegetable oil in a skillet. It should become transparent.

Step 3

Add chanterelle mushrooms to the onion in a frying pan and, stirring, fry them until they are fully cooked. Switch off and set aside from the stove. Let them cool down.

Step 4

During the time that the chanterelles are fried, the sauce should be prepared. In a special bowl, you need to mix light mayonnaise, sour cream and natural yogurt without fruit additives. Beat with a mixer or blender. The result is a homogeneous white, almost airy mixture. Put the resulting sauce in the refrigerator for 30 minutes.

Step 5

Boil the potatoes in a peel, cool it. Peel off the skin and cut into cubes. Place in a bowl where the salad will be prepared.

Step 6

Pickled cucumbers, too, cut into cubes equal in size to potato ones. Add to a salad bowl. Wash the fresh cucumbers and peel them, thinly cutting them off. Cut off the ends and cut them into cubes. Add to potatoes with pickles in a bowl.

Step 7

Cut the ham into cubes and transfer to the bowl where the ingredients for the salad are collected.

Step 8

Peel off the husk of green onions. Wash it and cut into cubes like all other products.

Step 9

Stir the salad with a specially designated spoon. Add fried and cooled chanterelles to the salad. Stir it again.

Step 10

It was the turn of canned peas and chopped greens. Open the jar, drain the brine, and put the peas in a bowl. Pour chopped greens here. Stir the salad again. Season the salad with light mayonnaise sauce and transfer to a beautiful salad bowl.
