The taste of chocolates or any other sweets depends on their composition and shelf life, so when choosing, you need to carefully read the list of ingredients and check the production date. As a rule, candies with quality ingredients made with real chocolate and natural additives are more expensive.
Expiration date of sweets
The fresher the sweets, the richer and more pleasant their taste. The shelf life of different products differs, the famous "Bird's milk" sweets differ in the shortest shelf life, they cannot be stored longer than two weeks, because they are made from beaten eggs, which have a short shelf life. If the box of "Bird's Milk" indicates that the shelf life is several months or years, then this means that a large amount of preservatives and unnatural products were used in their manufacture.
Gummies or jelly candies last a little longer, up to one month. Chocolate-coated chocolate or nut candies have a shelf life of up to 4 months. In any case, a shelf life of more than six months makes you think about the composition and quality of such products.
The most delicious sweets are sold in shops at confectionery factories, where you can buy a box of products made the day before. Jelly candies, marmalade or Bird's milk are especially good in the first days after preparation.
Storage conditions also affect the taste of the candy. They need to be kept in a dark, dry place at a temperature of about 18-20 degrees, in a closed box. Do not allow sudden changes in temperature or store the box next to strong-smelling foods, as chocolate absorbs odors well.
Incorrect storage conditions are indicated by a whitish coating on the surface of the candies or their irregular shape, as if they melted and then hardened again.
Composition of sweets
Delicious chocolates are made from real chocolate, which, in turn, is made from quality cocoa butter and cocoa powder. If the composition on the package contains a cocoa butter substitute (palm or coconut oil), then this is not chocolate, but just a cocoa-based icing. It is desirable that no other oils, except cocoa, be among the ingredients, while GOST requires that the content of substitutes be no more than 5%.
You can determine the quality of chocolate not only by the composition indicated on the box. If the candies melt in your mouth and melt at room temperature, then they are made from real chocolate.
To impart a bright taste and rich aroma, flavors and flavor enhancers are added to the sweets, but they are harmful to the body and interrupt the natural taste of the products that were used in the preparation. The use of these flavor enhancers suggests that there are few real products in sweets - nuts, chocolate, milk. Therefore, choose candies with the minimum amount of such additives in the composition.
