Currant pastila is a great dessert to be served with tea. It is very easy to prepare this healthy delicacy without artificial colors, thickeners, preservatives at home. If you have a couple of hours of free time at your disposal, then you can safely start cooking delicious and aromatic marshmallows.

- - 1 kg of currants (you can take both red and black);
- - 250 g of sugar;
- - 1 chicken egg.
Instructions
Step 1
First of all, thoroughly rinse the berries, remove the stalks. Put the currants in a saucepan, add a little water (30 grams) and put on a slow heat for 10-15 minutes (it is necessary for the berries to become soft).
Step 2
Next, drain the water, crush the berries, and then wipe them through a fine metal sieve. It is necessary to get a very delicate mashed potatoes without seeds and peels of berries. Simmer the puree twice over low heat for an hour.
Step 3
Add sugar to the cooked thick puree and beat thoroughly. It is necessary to beat until such a state that the mass turns white, only in this case the finished pastille will be elastic.
Step 4
In a separate bowl, beat the chilled chicken egg white into a fluffy foam to make the foam more fluffy, you can add a little salt to the egg white while beating (on the tip of a knife).
Step 5
Gently combine the whipped egg white with the chilled currant puree. Under no circumstances use a mixer, otherwise the protein will settle and the marshmallow will no longer work.
Step 6
Prepare a baking sheet, lay parchment on it and lay out the currant-protein mass in an even layer. Put in the oven for one hour, adjusting the temperature to 100 degrees (every 10 minutes you need to open the oven door to allow excess liquid to evaporate).
Step 7
As soon as the allotted time is up, take out the baking sheet and touch the marshmallow (it should be elastic). Cut it into squares or diamonds or any other figurines, roll it in powdered sugar and put it on a plate. Delicious and healthy currant marshmallow is ready.
