Norwegian cuisine is the culinary tradition of farmers and fishermen. Its dishes are easy to prepare, do not require exotic ingredients, are tasty and satisfying. Such dishes include lefse - pancakes made from potato dough, which are eaten with various fillings. Such pancakes with salmon are especially popular in Norway.

- 2 kg of potatoes;
- 80 g butter;
- 1 glass of cream, 33% fat;
- 1, 5 Art. flour;

- 500 g flour;
- 200 g butter;
- 2 tbsp. milk;
- 1 tbsp. yogurt or sour cream;
- a pinch of salt.
- For the cream cheese filling:
- 50 g salted or smoked salmon;
- 100 g cream cheese;
- a few onion feathers;
- a sprig of dill and cilantro.
- For filling with taratar sauce:
- 200 g of fresh salmon;
- 1 lemon;
- 2-3 tbsp mayonnaise;
- gherkin;
- a few capers.
Instructions
Step 1
Boil potatoes in salted water. Then peel and mash with a fork or pestle in the puree. Pour cream into it, salt, add sugar and softened butter. Mix everything thoroughly. When the potatoes have cooled slightly, add flour there and knead the dough.
Step 2
Divide the resulting dough into small portions, roll each of them, sprinkle with flour. Heat the butter in a skillet. Fry the tortilla over high heat, until lightly browned on both sides. To prevent excess fat from remaining on it, after cooking, place it on a paper towel and blot it on top with it.
Step 3
In Norway, they also like wheat pancakes with salmon, without potatoes. This dish is no less authentic than the lefse. Mix milk with melted butter, add sour cream or natural yogurt without additives. Gradually, spoon it into the flour mixture. You should have a firm and elastic dough. Such cakes are baked in the same way as potato pancakes.
Step 4
Start making a salmon-based filling. Take cream cheese, Philadelphia is best. Chop green onions and other greens. For example, dill and cilantro will do. Mix with cheese. Spread it on one side of the cooled cake. Cut the salted and smoked salmon into small cubes, sprinkle the cheese filling with the fish. Roll the cake into a roll, wrap it in plastic wrap and leave in the refrigerator for half an hour. Then remove the cooked dish and cut the roll into small pieces. This will create an original Scandinavian-style appetizer.
Step 5
Prepare a different version of the filling. In this case, cut fresh salmon into small pieces and marinate in lemon juice for half an hour. Fry the resulting fish quickly in vegetable oil. Spread a thin layer of tartar sauce - mayonnaise with the addition of chopped gherkins and capers. Sprinkle the cake with salmon, and then proceed according to the first filling recipe.
