Dumplings are a traditional dish in many folk cuisines. They can be made with semolina or flour. Soup with dumplings cooked in broth made of processed cheese is especially tasty.
Dumpling recipe
Mash a raw egg with a teaspoon of soft butter and gradually add a heaping tablespoon of semolina, rubbing constantly. Add salt to the tip of the knife. You should get a dough with the consistency of thick sour cream. Dip this dough into the boiling broth in about 1/3 teaspoon portions. Stir the soup gently to prevent the dumplings from sticking to the bottom of the pot. The finished dumplings increase in size several times and float to the surface. Add chopped parsley, dill, or green onions to the soup.
Instead of semolina, you can take flour. Dumplings made with this recipe will be firmer and less fluffy.
Dumplings can be eaten with soup or as a separate dish. In the second case, they can be seasoned with sour cream, tomato or sour cream sauce.
Processed cheese broth
Finely chop or grate 2 processed cheese and pour 3 liters of cold water over them. Add to the water the raw peeled onion, cut crosswise to the middle, parsley or celery root and simmer for a while. Remove the roots from the broth and season with salt to taste. Not all curds melt in boiling water, so do not be upset if they still float in suspension.
Sour cream sauce for dumplings
Add 1-2 crushed garlic cloves to the sour cream and bring to a boil. Season with salt and finely chopped herbs.
