I have tried many ways to cook a chop, but I still found the following one to be optimal for myself. The chop itself is quick and surprisingly simple to prepare, and the sauce is diluted directly on the fat that remains after it is cooked.

It is necessary

  • 1. Pork (lean) - 400 g.
  • 2. Butter - 1 tbsp. l.
  • 3. Vegetable oil (preferably olive) - 1 tbsp. l.
  • 4. Black pepper.
  • 5. Salt.
  • For the sauce:
  • 1. Gouda cheese (or its analogues) - 200 g.
  • 2. Pickled cucumber - 1 pc.
  • 3. Cream (low-fat sour cream) - 150 g.
  • 4. Water - 200 ml.
  • 5. A bunch of fresh herbs.

Instructions

Step 1

First, we prepare the meat for processing: we wash it under cold water and dry it by blotting it with a paper towel. Cut off as much fat as possible from it (it is better to take the leanest meat for chops), then cut 4 pieces into equal parts and beat off with a hammer with moderate force on both sides, rub them with salt and pepper.

Step 2

In advance, grate the cheese on a grater for the future sauce and peel the cucumber. Cut the peeled pulp into small cubes.

Step 3

We put the pan on maximum heat, heat butter and vegetable oil in it and quickly fry pieces of meat in them on each side (this is necessary so that the meat does not become dry - we kind of "seal" it from all sides, preventing the evaporation of the internal liquid) … Reduce heat and sauté the chops on each side for 5 minutes. Then remove them from the pan.

Step 4

Fill the fat remaining after frying the chops with water, add cream and cheese to them. Melt the mixture over low heat until a uniform mass is formed. Salt, pepper the sauce to taste, remove from the stove. Finally, put the cucumber and stir.

Step 5

Put the meat on plates, pour over the sauce and decorate it with fresh herbs before serving.
