Delight your loved ones and loved ones with unusual chocolate pancakes with delicate filling. This recipe uses not only cocoa powder, but also natural chocolate, which gives the pancakes the appropriate color and flavor. For the filling, it is recommended to use mascarpone cheese, the taste of which will be elegantly complemented by berries (blueberries, strawberries, cherries) or finely chopped sweet fruits, for example, a banana or a pear.

- • Milk of any fat content - 1 glass
- • Cocoa powder - 1 tbsp. l.
- • Bitter chocolate - 1 bar
- • Chicken egg - 2-3 pcs.
- • Granulated sugar - 2 tbsp. l.
- • Wheat flour -180 g
- • Salt - a pinch
- • Vegetable oil in the dough - 50 ml and for frying

Step 1
Milk is poured into a bowl and heated in any way possible, the fastest way to do this is in the microwave. While the milk is heating, the chocolate needs to be broken into small pieces or grated on a coarse grater. Chocolate is dipped in hot milk and thoroughly stirred with a whisk until smooth, and then set aside to cool to room temperature.
Step 2
While the chocolate milk mixture is cooling, it's time to move on to the rest of the ingredients for the chocolate pancake dough. Chicken eggs are divided into whites and yolks. The proteins are poured into a dry, fat-free dish and beat with a mixer until dense foam. In order for the whites to whisk well, to get a stable foam, you can add a little salt or a drop of white vinegar while whipping.
Step 3
Egg yolks are rubbed with sugar until a single white mass. Wheat flour is combined with cocoa powder, sieved and added to the yolks. Protein foam is spread in parts into the dough and gently mixed. At the very end, the remaining liquid ingredients are poured: vegetable oil and chocolate-milk mixture. All are thoroughly mixed until smooth, breaking the resulting lumps. Pancakes are baked in the usual way, if necessary, grease the pan before the first pancake.

When the pancakes are almost ready, you can prepare the filling for them. To do this, combine mascarpone cheese with powdered sugar and beat for 30 seconds with a whisk, but not with a mixer. You do not need to whisk for a long time, as the mascarpone will get into the butter and the cream will not work. The pancake is filled with a filling of fruits or berries and a teaspoon of mascarpone cream, poured over with a sweet sauce of your choice.
