Oven-baked young potatoes are a versatile dish. You can find many different recipes for its preparation, but one of the simplest and most delicious is potatoes with tomatoes and mushrooms.

- - medium-sized potatoes - 6 pcs;
- - tomato - 2 pcs;
- - pickled mushrooms - 100 g;
- - bell pepper - 1 pc;
- - onion - 1 pc;
- - sour cream - 4 tablespoons;
- - hard cheese - 150 g;
- - ground black pepper;
- - salt to taste;
- - dill or parsley;
- - vegetable oil.
Instructions
Step 1
Rinse young potatoes thoroughly with cool water, peel and cut into slices. Tomatoes are cut in the same way. Cut the champignons and bell peppers into small plates, and cut the onions into rings or half rings.
Step 2
Grease a baking sheet or deep baking dish generously with vegetable oil. A layer of young potatoes is laid out on top. It can be slightly salted. Put chopped tomatoes, bell peppers, onions and mushrooms on top of the potatoes. Add a little more salt and seasoning to taste, sprinkle with dill or parsley, top with sour cream. Grate hard cheese on a coarse grater and sprinkle on potatoes.
Step 3
Place a baking sheet or baking dish in the oven, turn on 180 degrees. The dish must be baked until tender. The baking time depends on the power of the oven.
Step 4
Young potatoes baked in the oven are served hot. Homemade pickles will be an excellent addition to the dish. It can be pickled cucumbers or tomatoes. Bon Appetit!
