Pastries stuffed with quince are very tasty and fragrant. Replacing some of the wheat flour with rye will add some rustic charm to the pies.

Step 1
Cooking rye dough with yeast. To make a quince pie, take wheat flour with an average percentage of gluten, a special wheat protein responsible for the stickiness of the dough. Let's take the most common dry bakery yeast. Peeled rye flour with a protein content of 10 grams per 100 grams of product. Let's mix both types of flour, wheat and rye, and yeast.
Step 2
Warm the milk slightly to room temperature. Put sugar, salt in milk and pour in butter. Add dry mixture and mix thoroughly. Knead the dough and leave for about 40 to 60 minutes to rise.
Step 3
While our dough is coming up, let's prepare the filling. To do this, peel the quince and rub it on a fine grater, mix it with sugar and put it in a thick-walled crouton. Cook over low heat. The mixture must be stirred from time to time to avoid burning. Cook until the quince gives off a pleasant aroma. In this case, the quince will become
soft and delicate and will acquire a beautiful amber color. Remove from heat and cool.
Step 4
The dough that has come up must be divided into two unequal parts. Roll out most of the dough into a wide flat cake about 5 mm thick and carefully lay out with a rolling pin into a round shape with a diameter of 24 - 26 centimeters.
Make high sides, lay out the filling. After that, roll out the rest of the dough thinly enough and cut into narrow strips. Place a wire rack on top of the filling. If there is no round shape, use any one approximately the same
size.
Step 5
Leave the cake warm for 10 - 15 minutes, you can cover with a film, a napkin or a lid. Meanwhile, preheat the oven to 180 - 200 degrees. Place the dish in the oven. Bake the product for 30 - 40 minutes. Remove the finished quince pie from the mold, cool. The cooled cake can be sprinkled with icing sugar, if desired.
