There is almost no hassle with this cake, it turns out to be sweet and tender and does not require eggs or other animal products to prepare it. Such a cake is suitable for a lean table; vegans can safely eat it.

- - semolina - 1 glass
- - quince - 2 pieces
- - water - 50 ml
- - vegetable oil - 50 ml
- - sugar syrup (water - 0.25 cups + sugar 0.5 cups)

Step 1
The list of ingredients for making a lean, quince-filled, bulk pie is very limited. You do not need to cook the dough; instead, it is enough to mix wheat flour, granulated sugar and semolina in a dry saucepan.
The prepared dry mixture should be set aside and start preparing the filling.
Step 2
To do this, boil liquid sugar syrup from water and sugar. Combine granulated sugar and water in a heat-resistant dish and put on high heat.
Bring to a boil and simmer, reducing heat to low, until sugar is completely dissolved. Remove from heat.
Step 3
Then peel the quince fruits from the skin and seeds, cut into small pieces or grate on a fine grater. Wipe with a blender, adding 50 ml of cold water and sugar syrup. Water is needed to make the filling juicier, since the quince fruit itself is quite dry.
Step 4
Take a silicone baking dish with a diameter of 24 - 26 cm. There is no need to grease such a baking dish. Place one third of the dry mixture evenly over the bottom of the dish. Place half of the filling on top. Then again the dry mixture - one third or half of the remaining. And the rest of the filling. Remember to flatten the layers.
Step 5
Finally, add the rest of the dry mixture and drizzle over the top with vegetable oil.
Preheat the oven to a temperature of 180 degrees Celsius and put the pan with the future pie inside. Bake for 45 minutes.
Step 6
At the end of this time, remove the cake pan from the oven, cool for a few minutes and carefully transfer to a dish. This must be done very carefully so that the cake does not fall apart. It is easiest to flip the loose pie onto a wide board and then flip it from board to platter.
The cooled pie is cut into portions and served with unsweetened tea or coffee.
