In the season of fresh vegetables, it is so nice to treat yourself and your loved ones with a light and tasty dish - Indian-style glazed carrots! It can be served both as a side dish for meat or fish culinary products, and as a completely independent dish for a summer dinner. The Indian flavor of glazed carrots will add spices - cardamom, turmeric, coriander.

It is necessary

  • - 500 grams of carrots;
  • - 3 tablespoons of butter;
  • - 2 tablespoons of honey or brown cane sugar;
  • - 2 tablespoons of orange juice;
  • - 150 ml of sparkling mineral water;
  • - 1/2 teaspoon each of ground spices - coriander, cardamom, turmeric, black pepper;
  • - salt to taste;
  • - parsley and cilantro.

Step 1

Preparing carrots

Young small carrots are ideal for this dish - rinse them well enough (you don't even need to peel them!) And leave some sprigs of green tops at the base. If the carrots are large, then they need to be peeled and cut into small oblong cubes.

Step 2

Glaze preparation

Melt half the butter in a large frying pan, add all the spices and heat while stirring. Add honey or sugar, salt, orange juice, mineral water. Bring the mixture to a boil.

Step 3

Put the carrots in a skillet with boiling sauce and simmer after boiling over low heat, covered with a lid, 15-25 minutes - the stewing time depends on the type of carrot: the young one will cook earlier. Then you should remove the lid, turn on the heating to the maximum and, with a strong boil, evaporate the remaining liquid, periodically shaking the pan. The carrots should be covered with a layer of sticky shiny glaze - at this moment you need to turn off the stove, add the second half of the oil, finely chopped parsley and cilantro to the pan and shake the pan again to mix its contents. Serve the glazed carrots immediately, until they cool.
