Pancakes have always been a favorite dish of the Slavs. They were credited with magical properties, they were compared to the sun. The pagans greeted spring with pancakes. And now this custom has remained with the Orthodox. This dish remains an important attribute of wedding and funeral rites. Each housewife will always have her own secret of their preparation. Baking pancakes is a simple matter. Just approach this process with imagination and a good mood.

- wheat flour - 2 cups;
- milk - 4 glasses;
- heavy cream - 1 glass;
- butter - 100 grams;
- eggs 5 pieces;
- yeast 30 grams;
- sugar - 1 tablespoon;

Instructions
Step 1
Sift buckwheat and wheat flour through a fine sieve 3 times. This will enrich it with oxygen, which will make the dough fluffier and more airy.
Step 2
Heat 2 cups of milk in an enamel bowl to steam temperature (36 degrees). If you are using homemade milk, boil it first and then cool it down.
Step 3
Knead the dough. To do this, dissolve 30 grams of yeast in a little warm milk, pour in the rest and add buckwheat flour. Mix everything thoroughly until smooth and place in a warm place for fermentation for 1, 5-2 hours. The dough will improve the consistency of the dough, the pancakes will turn out to be looser and plump.
Step 4
After the time has passed, grind the egg pancakes with sugar, salt and sour cream. You should get an airy homogeneous mass. Add it to the dough and whisk.
Step 5
Pour wheat flour into the mixture gradually and pour in the milk. Beat the dough until the lumps disappear. Place it in a warm place before lifting.
Step 6
Whisk the whipped cream and add to the risen dough, stirring with a spatula from top to bottom. Let stand 15-20 minutes.
Step 7
Grease a pancake pan with vegetable or butter, chop it over the fire.
Step 8
Lift the pan, pour a little dough in a thin stream and spread it evenly over the entire surface with quick rotating movements. Bake pancakes with buckwheat flour on both sides.

Pancakes can be served with salted fish, mushrooms or sour cream.
