Nelma is a rare and valuable fish, rather large (can reach 1.5 m in length), inhabiting Siberian rivers and the Arctic Ocean basin. Nelma meat is unusually tender and white, rich in fats and vitamins A, D, E. Nelma is fried, baked, boiled, steamed and served with various sauces.

It is necessary

    • 1 fresh fish (2.5-3 kg);
    • 4 eggs;
    • 2 large fresh cucumbers;
    • 1 lettuce
    • 2 carrots;
    • 2 onions;
    • 1 bunch of greens;
    • 1 tsp peppercorns;
    • 1 bottle of dry white wine.
    • For the sauce:
    • 1 small cucumber;
    • 1 egg;
    • 2 egg yolks;
    • 150 g of fatty thick sour cream;
    • 1/2 tablespoon vegetable oil;
    • 1/2 lemon juice;
    • 1 tbsp mustard powder;
    • salt
    • ground black pepper.

Instructions

Step 1

Pour a bottle of dry white wine, two liters of water into a saucepan, bring the mixture to a boil. Peel the carrots and onions, wash, chop coarsely, wash the herbs. Dip carrots, onions, a teaspoon of peppercorns, not chopped greens, salt in a boiling liquid. Simmer over low heat for half an hour, then remove the pan from heat and let the broth cool to room temperature.

Step 2

Clean fish from scales, gut, remove gills, rinse thoroughly with cold water. Strain the broth, removing vegetables and spices, put the prepared fish there, put the pan on medium-low heat, bring to a boil, reduce heat to low and cook for twenty to thirty minutes (make sure that the fish does not boil, you need it as a whole). Remove the pan from the heat and let the broth steep for two to three hours at room temperature.

Step 3

Prepare the sauce: peel a small cucumber, chop, put in cheesecloth and squeeze. Boil one hard-boiled egg, take the boiled yolk and mash with two raw yolks, add a spoonful of mustard, a pinch of salt, ground pepper and vegetable oil. Whisk everything until smooth, then add sour cream, cucumber pulp and juice of half a lemon.

Step 4

Peel two large cucumbers from the skin, take a spoon with cutting edges (the so-called potato spoon), cut the flesh of the cucumber into small balls. Dip the balls in boiling salted water for one minute, put in a colander, and let the water drain. Disassemble the lettuce into leaves, rinse and pat dry. Hard boil four eggs.

Step 5

Remove the boiled nelm from the broth, put it on the wire rack, let the liquid drain completely. Place the lettuce leaves on a large platter, place the fish on top of the salad, and arrange the cucumber balls around the fish. Cut the eggs into circles and decorate the dish with them. Serve the sauce in a separate bowl.
