Step 1

Prepare the filling. In order to fill the wafer rolls, you first need to prepare a delicious filling. You can choose a simple classic version and make it with condensed milk and butter. To do this, beat the butter with a mixer until a viscous white mass is formed. Without stopping whisking, gradually add condensed milk to the butter. Beat the cream until you have a smooth, fluffy mixture that will be your filling.

If you want to step away from the classics a bit and surprise family and guests, make a custard. To do this, take an egg and separate the yolk from the white. You don't need protein, so you can put it in the refrigerator or throw it away. Mix the yolk with milk until smooth, and then add granulated sugar and vanilla sugar to this mixture. Mix everything thoroughly and put on low heat. Simmer until the cream thickens - this process usually takes about five minutes. Cool the cream before use.

Start the tubes as you cook. In order to save time, start the straws directly during preparation, one after the other. Make a cream in advance, take a tablespoon and put it all next to you. Wait for the first layer of waffle to cook, remove it from the waffle iron and pour in the dough for the next layer. While it is baking, spread the filling on the finished layer and gently roll it into a tube. This way, you will start each tube while the next is being prepared. When resorting to this method, it is important not to let the future straw cool and harden, otherwise you will not be able to roll it up - the dough will break and crumble.

Use a pastry syringe or cornet. This method of filling the tubes with filling involves a step-by-step preparation - first you bake and roll the tubes, then fill them with the filling. This is useful if you are preparing ahead of time but want the waffle portion to remain firm and crispy by the time your guests arrive. In such a situation, it would be more expedient to prepare the base in advance and fill it immediately before use, so that the cream does not have time to absorb and soften the waffles. To do this, use a cornet or pastry syringe. Place the pre-prepared filling in your device and squeeze it into the tubes on both sides so that the middle does not remain empty.
